Q: Why did you choose to join the team at Boot Ranch?
A: My reason for choosing Boot Ranch is my love for the Texas Hill country and the people here. The facilities at Boot Ranch turned me on to this place.
Q: What are you most looking forward to at Boot Ranch?
A: I am most looking forward to the development of the property structurally and with our membership.
Q: What do you hope to provide to Boot Ranch members?
A: I would love to provide the best meal that can be found in this part of the state to our members.
Q: What do you love most about the Hill Country?
A: What I love most about the Hill Country is the scenery, especially this time of year. And all of the local wineries and vineyards in the area.
Q: What are your favorite dishes to prepare?
A: I love to prepare anything that has a southwestern flare, making cold refreshing tasty food when it is blazing hot outside!
Q: Is there anything else you would like to share?
A: I would like to thank the member for their continuous support with the food and beverage department and boot ranch as a whole during these times of growth and development.

Watermelon and Yuzu Gazpacho
Yields 4 servings
- 1 large tomato, pureed
- 1/2 Serrano chile
- 2 cups cubed fresh watermelon
- 1 teaspoon red wine vinegar
- 1/4 cup extra-virgin olive oil
- 2 tablespoons minced red onion
- 1/2 cucumber, seeded and minced
- ½ cup fresh yuzu juice
- 2 tablespoons minced fresh dill, plus more for garnish
- Kosher salt and freshly ground black pepper
- 1/4 cup crumbled feta cheese
Puree all ingredients together in a food processor and garnish with feta cheese.
